For example, one could make a graph that connects site to sites that are linked by it - or that are accessed by the same people. Does that kind of analysis exist? Where, how it is called and how can I access it?

Not quite what you are looking for (sites that are linked) but something similar is Pearl Trees which shows sites that are connected by topic similarity. But it's user generated.

Google used to have the Google Wonder Wheel for this, unfortunately it's now dead.
