I would add a pro for separate server is you know you have everything under source control. You can't forget to commit something.

I can't count the number of times I've seen the management stop developers (2 to 3) for a day then a deployment specialist to crash fix something (and do this numerous times over the product's life cycle) instead of spending 2-4 days to do it right. Great answer.
