How can you be sure that a non-German speaking developer won't be introduced in the project at some point in time?

The problem is with "near about same as my device". Near the same isn't good enough. The small difference can affect the great things of your application. Not only do you have to actually test it on hardware, but you have to think of testing on different versions of the hardware and software (iOS version).

This way of designing systems corelates with SOA (Service Oriented Arhitecture). Basically, you have database operations as a service. This may be an unofficial policy for you, but it is used quite often. It is more scalable and easy to mentain, as @tdammers stated.
