Drools is a good choice. I personally am using Oracle BPM right now. There's also Feugo. Lots of open source and propriety tools available.

I agree with you. Your aspirations are your personal. It should not affect company work. This is not lying. One is not sure if one will be an entrepreneur. I think mentioning it is not important in interviews.

Yes, View is the UI in terms of MVC. Mock up screens can be anything from simple wire frames to HTML pages. You can have CSS done at the time of creating mock ups, that will save the work later, as CSS mostly will not change with any dynamism that you may introduce later.
